Instituto Cervantes Dublin to Host a Comprehensive Spanish Cuisine Cookery Workshop from 8th November – 6th December

When celebrity chef Jamie Oliver recently set the culinary world on fire by including chorizo in his own take of the Valencian paella, he not only opened a fascinating debate about one of our most iconic dishes, he also reminded us that Spanish cuisine is very much alive, constantly changing and evolving.

By the way, according to historians, the answer is “YES”. Some of the original paella recipes, back in the day, did have chorizo. But even if it didn’t, there is nothing sacred when it comes to food, which nowadays thrives in a space of imagination, fusion and creativity.

Chef Juan Luis Casero is one of the “cocineros” who has crossed those borders to bring to Ireland a taste of Spanish cuisine from the kitchens of several Dublin restaurants. Casero will host at the Instituto Cervantes Dublin a comprehensive cookery workshop from 8 November – 6 December, offering a great opportunity to embark on a culinary journey that will take you from the Canaries to Madrid, Catalonia to Andalusia and beyond.

Over five sessions, every Tuesday participants will get to see and understand how professionals prepare some of Spain’s most iconic dishes, which have been chosen to reflect the diversity of the country’s culinary heritage.

You will also have the opportunity to sample some of Spain’s best regional wines and Sherry varieties and will learn about the distinctive cultural identities of Spain’s principal autonomous regions, as reflected in the cuisine associated to them. Many of the ingredients used in the featured recipes are available in Ireland, which means that, apart from the enjoyment you will get from participating, you will be able to reproduce much of what you learn at home.

The workshop will be held on consecutive Tuesdays in English and each of the 90 minutes session will focus on a particular geographical area and its distinctive cuisine. Sessions will run from 6.30pm to 8pm. The schedule is as follows:

1.- Asturias, Cantabria, Galicia
2.- Canary Islands, Andalusia, Murcia
3.- Catalonia, Valencia, Balearic Islands
4.- Castilla y León, Castilla-La Mancha, Extremadura, Greater Madrid
5.- Aragón, La Rioja, Navarra and Basque Country

In each session, you will receive a file containing information on the region in question. The file will also contain the recipes introduced, notes on the region’s wines and information on where the particular ingredients can be purchased in Ireland.
Whether you are a novice or an experienced cook, you are welcome to this workshop.

Fee: €125 (includes tasting).
When: From 08/11/2016 to 06/12/2016 (18:30-20:00pm)
Where: Instituto Cervantes, Lincoln House, Lincoln Place. Dublin 2. Ireland
