For this very reason we are in the constant search of recipes that are super easy and quick to prepare to fit our hectic life styles, but also have a high nutritional value. These keep us fuelled and energised with the right type of foods, with great benefits for our mood and health. We are extremely conscious of picking the best of foods but also ingredients that are accessible for all, avoiding to send you from health store to health store to find ingredients that probably you will use only once and never again. Avoiding wasting food and your precious time, hunting for ingredients that suppose to make your life easier. We want for our food to save you any hassle and leave you full of joy.
This specific recipe is perfect for packing and go. Bring it with you to work or college, serve as a main meal in the evening, side dish or even a very stylish canapé. The immense benefits of eating raw vegetables are endless, so we want to encourage you to try and include more of it in your weekly eating habits. This rolls are so fresh, tasty, crunchy and colourful. The recipe we are giving you here is a very basic one, but you can add on your favourite proteins, sauces and ingredients such as smoked tofu, lean turkey, chicken, prawns, boiled eggs, etc. Also more vegetables like sugar snaps, asparagus, mushrooms, etc. Make sure to always include coriander and spring onions as these will give the flavour need it in such a clean recipe. Added bonus they are gluten free and wheat free, perfect for Coeliacs and even better a great helper in a weight loss eating life style. Enjoy every bite!
1 Tbsp. peanut butter
2 Tbsp. Tamari or Soy sauce
2 Tbsp. lime juice or rice vinegar
1 tablespoon honey
1 tsp. chilli paste/sauce
1/2 garlic clove, grated
1/2 tsp. sesame oil
1 cucumber, thinly sliced
2 carrots, finely sliced
4 spring onions, finely slice
A handful of bean sprouts
1/2 head iceberg lettuce, finely sliced
Plenty of fresh Coriander
8-10 rice paper sheets/wraps
1. In a small bowl mix all the ingredients for the peanut sauce, set aside.
2. Place 1 rice paper sheet in a medium bowl of lukewarm water for 15 seconds or until just soft. Place on a clean tea towel or paper towel.
3. Arrange your filling along the centre of the rice paper sheet. Fold ends in and roll up firmly and gently to enclose filling. Repeat with remaining rice paper rounds and filling.
4. Serve with the peanut sauce and remaining coriander. Keep them cover with a damp tea towel or in cling film if you prepare them beforehand. Enjoy this gorgeous clean treat, packed with nutrients and flavour.
