Fresh The Good Food Market announce ‘Residency’ Project with Kwanghi Chan

The retailer combines forces with Michelin trained chef to create new foodie destination in Dublin

Fresh The Good Food Market (“Fresh”) has announced its collaboration with Michelin trained chef and recent winner of RTE’s Food Truck of the year, Kwanghi Chan.

Fresh invited Kwanghi to take up ‘residency’ at its Capital Dock store in Dublin 2 to take his hugely popular street food truck offer ‘Bites by Kwanghi’ and bring it into its first retail environment.

The idea was to create a new food foodie destination in Dublin which showcases the talented chef’s food within the very prestigious Fresh store.

The new concept is now live and trading, with the entire in-store dining space given over to the Bites concept which is branded and has its own entrance. There is seating for up to 100 customers which includes the covered exterior dining area.

The Bites menu features authentic Asian-style street food with a wide variety of options available from dumplings, ramen bowls, tacos, bao buns, wings and sides.

Wine is also being served but not from a standard wine list.  Here Fresh and Kwanghi have partnered to enable customers to browse and select their own wine from the store’s wine department. This offers the customers ultimate choice from a huge range of boutique wines which will be subject to a corkage fee.

Kwanghi has applied his own creative touches to the space, introducing new planting, music, street food packaging, and a collaboration with artists Jill & Gill for the space’s new art installation.

Noel Smith, founder and Managing Director at Fresh The Good Food Market stated “In September of this year we embarked upon the project with the objective of better utilising our store’s dining facilities. The brief was that it was a blank canvas, and we wanted to partner with a chef who’s personal brand and food style could create a new, compelling reason to visit Fresh in Capital Dock.  I am delighted to be working with Kwanghi. The quality of his food is fantastic, and with the eye-catching art from Jill & Gill, we hope all who visit will enjoy something different in the city”.

Kwanghi Chan, owner of KoSa Foods Ltd (ChanChan|Bites) stated ”I’m very excited to be partnering with Fresh The Good Food Market with our Bites street food concept at Capital Dock. It’s a great opportunity to be serving fresh Asian street food in such a beautiful restaurant setting. It’s also great to be able to working in such a creative  space, being surrounded by newly commissioned  art pieces by the extremely talented duo Jill & Gill”.
