Fish Pie Recipe by David Gillick
I never would have eaten this when I was growing up, as I hated fish. But when I started looking after my diet, I decided to give fish a go again and it didn’t disappoint. It’s now an integral part of my regime. Fish pie usually contains a lot of cream and as a result isn’t as healthy as you might think. I’ve tweaked it to add to the nutritional value and get rid of the badness while still keeping it tasty and hearty. I’ve adapted this recipe from Jamie Oliver. His first book, The Naked Chef, really helped me learn how to cook.
– 400g sweet potato, unpeeled and cut into large chunks
– pinch of nutmeg
– 1 large carrot, peeled and grated
– 1 celery stick, grated
– ½ courgette, grated
– ½ fresh red chilli, deseeded and finely diced
– 150g Cheddar cheese, grated
– 2 large ripe tomatoes, chopped
– good handful of spinach
– large bunch of fresh parsley, chopped
– juice of 1 lemon
– 250g fish mix, such as hake, ling, cod and salmon (a supermarket mix is fine)
– salt and pepper
– 40g feta cheese, crumbled
1. Preheat the oven to 200°C/400°F/gas mark 6.
2. Boil the sweet potatoes in a medium saucepan until tender and cooked through. Drain and put back in the saucepan. Add the butter and a pinch of nutmeg and mash until smooth. Set aside.
3. Place the carrot, celery, courgette, chilli and grated Cheddar in a circular casserole dish. Scatter over the chopped tomatoes, spinach, parsley and lemon juice. Add the fish and mix all the ingredients well. Season with salt and pepper.
4. Cover the fish with the mashed sweet potatoes and sprinkle with the crumbled feta cheese. Cook in the oven for 40 minutes, until the sweet potatoes are lightly browned and the fish pie is warmed through.
