Meet the Maker – This Dublin Pub is Hosting an Unmissable Wine Dinner

The Legal Eagle is hosting a tasting menu alongside one of the restaurant’s favourite wine producers, Château La Baronne. The evening will see dishes paired with wines from the iconic Château.

Special guest on the evening, Anne Lignères of Château La Baronne, will guide guests through her family’s wines, the history of the famed Château, and the challenges and joys of producing biodynamic and organic wines.

On the night, chef Ian Connolly will be cooking his signature nose to tail menu, as well as dessert. Recently, The Legal Eagle won the Wine Spectator 2018 Award of Excellence, making it the only pub in Ireland to receive this accolade.

Château La Baronne sits along the Alaric Mountain in the Corbières wine region in the Languedoc-Roussillon. Corbières is one of the largest regions in France and one of the least populated. The Lignères family can trace their ties to the world of wine back to the 16th century, although it wasn’t until 1957 that  André and Suzette Lignères bought the vineyard.

The unique approach to winemaking at this estate is heavily influenced by the professional backgrounds of André and Suzette – André was a GP and Suzette was a pharmacist.

The wines at Château La Baronne showcase the estate’s commitment and respect for the land through their organic farming methods. They are passionate about showcasing the spectacular terroir of the region.

Today, it is the next generation of the Lignères family running the estate; Jean (the village doctor, like his father before him) and his wife Anne, Paul (a dentist) and Geneviève (a biologist).

Château La Baronne and The Legal Eagle share a similar passion and ethos for their produce. The La Baronne Les Chemins is one of the staff’s favourite wines served in the restaurant and is a popular choice with diners too.
