Golden Turmeric Pearl Couscous Recipe from Avoca

  • 300 grams Giant Pearl Couscous
  • 5 grams Turmeric powder
  • 20 grams Dill Chopped
  • 20 grams Parsley Chopped
  • 20 grams Mint Chopped
  • 125 grams Golden Raisins
  • 100 grams Pomegranate Seeds
  • 30 ml rapeseed oil
  • 3 lemons juiced
  • 1 lemon zested
  • 10 grams Sea salt
  • 2 grams Black Pepper


  • Add turmeric powder to a large pot of boiling salted water. Add couscous & cook until al dente to the tooth. Drain & let cool. Drizzle with a little oil to stop it from sticking.
  • Add all the herbs, golden raisins, pomegranate, lemon, rapeseed oil & seasoning & mix well to combine everything together.
  • Taste & adjust consistency if required.
