This vibrant salad is perfect on its own or as a tasty summer side dish!
- 100g cooked couscous
- 50g chickpeas
- 50g spinach
- 1 carrot (grated)
- 3 vine tomatoes (chopped)
- ½ cucumber (chopped)
- 1 bell pepper (chopped)
- Bunch of fresh coriander (chopped)
- 60g Glenisk Organic Greek Style Natural Yogurt
- Juice of ½ lemon
- 80ml extra virgin olive oil
- ½ garlic clove crushed
- 1 tbsp honey
- 1 tbsp white balsamic vinegar
- Combine all the salad ingredients into a bowl.
- Combine all dressing ingredients together before dressing the salad.
