Bircher Muesli Recipe by David Gillick
I first came across Bircher Muesli when training in Australia. I would open the fridge in the morning and find a bowl of porridge ready to go. I tried some but it was a bit too sweet for me because the oats had been soaking overnight in apple juice. I decided to give it a go and changed the juice to non-dairy milk. You can add in your favourite berries and seeds.
– 200g oats
– 500ml unsweetened coconut, almond or soya milk
– 3 tbsp currants
– 2 tbsp chia seeds
– 2 tbsp hemp seeds or milled linseed
– 2 tbsp coconut flakes or desiccated coconut
– 1 tbsp pumpkin seeds
– squeeze of fresh lemon juice
1. Mix all the ingredients together in a large bowl. Cover with cling film and refrigerate overnight.
2. In the morning, transfer the Bircher muesli to individual bowls and top with fresh fruit, crunchy nuts or any other superfood you have on hand. My favourites are berries, sliced bananas and a dollop of yogurt.
