Is there anything better than sipping on an expertly crafted cocktail on a summer’s evening? We think not. With that in mind, TheTaste Summer Cocktail Festival takes the hassle out of the hunt for Ireland’s finest shaken and stirred favourites.

The Taste Festival Cocktail – Bellini’s Bar

This is a tropical inspired cocktail, perfect for summer sipping. One sip and you will be transported to the tropics.

Bellini’s Bar offers an intimate setting, perfect for conversation, dining and drinks for all occasions.

Offering an extensive Evening Menu from 5pm till late, including the popular Chef’s Tasting Plate, Bellini’s also has a quality drinks menu.

They can offer guests a selection of speciality wines from small vineyards in the major wine regions of the world, local craft beers from Cork City’s Franciscan Well, and signature cocktails, including The Maryborough Classic, created by their very own mixologists.

In short, Bellini’s Bar offers a completely personalised experience from an impeccably stocked bar.


Keith Curley is the head mixologist at Bellini’s Bar and has been a bartender for the past 14 years. He travelled around the world perfecting his trade and getting international inspiration. One of Keith’s favourite cocktails to make would be the signature cocktail at Bellini’s Bar, the Maryborough Hill:

“This is truly a unique drink and perfect to enjoy on a summer’s day as it is filled with tropical flavours. Guests really enjoy the tricolour effect of the drink and they can never stop at just one- it has definitely become the most popular drink in Bellini’s.”

Keith also enjoys creating bespoke cocktails for customers and using fresh herbs and flowers from the Maryborough Garden. He says: “You can really taste the difference when you use local, fresh ingredients.  I have recently started dehydrating fruit to use as garnish, it makes the cocktails look great and really add the showstopper element.”
