Apple and Blackberry Cobbler Recipe by Anna Jane Kingston

There’s nothing quite like a warm cobbler on a chilly autumn evening. Juicy fruits and a little sweetness added to this Apple and Blackberry Cobbler recipe will bring your senses to life and make you feel that warmth we crave on dark nights.


Fruit Filling
– 250g blackberries
– 300g apple
– 3 tbsp honey
– ½ a lemon
– 1 tsp cinnamon
– 1 tsp vanilla

Cobbler batter
– 100g self raising flour
– 50g cubed butter
– 50g castor sugar
– 1 tsp cinnamon
– 1 egg, whisked
– 5 tbsp of water


1. Pre-heat the oven to 160°C and grease a deep ovenproof dish with some butter.
2. Peel and core the apples into bite size pieces. Place all the fruit filling ingredients into a saucepan and bring to the boil – then simmer for five minutes and add to the bottom of the ovenproof dish.
3. Add the flour to a mixing bowl and lightly rub in the 50g of cubed butter with your fingertips.
4. Next, stir in the sugar and cinnamon. Add the egg and water and whisk through with a fork to form a batter like consistency.
5. With a large tablespoon, start dropping spoonful’s of the batter over the fruit – leaving gaps for the fruit to peek through.
6. Place in the oven and bake for about 30 minutes until golden brown on top.
7. Serve with some custard or vanilla ice-cream for a real homely dessert.
